This is my personal favourite pick-me-up condiments/salad dressing. I grew up with the smell of turmeric, ginger, garlic and chilli brewing in the kitchen, and the sound of the pestle and mortar means hide! or you will end up doing the pounding. My grandma and mum are amazing cooks, and their palms are frequently bright yellow from the turmeric. Now when I prepare traditional recipes, I feel my mum's, grandmother's and her mother and those before her Spirit in the food. It literally does something to my well being.
These combination of herbs and spices does the trick for me, especially before, during or after a long drive or gardening, it rejuvanates my body. It is used as a condiment served on rice or vegetable dressing.
Ingredients: kaffir lime leaves, green chilli, garlic, ginger, palm sugar and salt.
1. Slice kaffir lime leaves finely and refine garlic, chilli, a little ginger, palm sugar and salt until become a paste, and mix them together.
2. In boiling water, blanch vegetable of your choice. Drain and set aside.
3. In a bowl, toss vegetables and spiced paste together.
